So delicious! I've made this numerous times and everyone always loves it. The ingredients work so well together and as a lifelong meat eater I can honestly say, I don't miss the meat at all! Great flavor. Mmmmmm.

I can't believe I didn't miss the meat in chili! This isn't a "true" chili, but a delicious soup/stew. This is a really good soup. Wonderful taste, and wonderful to look at....thanks for posting!
As a vegetarian for more than half my life (and I should say I'm 29 for the 12th time as of 10 days ago!), I've tried a fair share of vegetarian chilis, here, at restaraunts, on the back of vegetarian product packages, come up with some of my own, even converted non-vegetarian chilis... you get the idea. So I suppose I'm a bit of a veggie chili connoisseur, and so is my husband, considering all of the veggie chili that I've had him eat over the years ;). In any case, Emeril and Sharon (with her "leetle" changes) have a good thing going here! While portabellas are standard in my own chili recipe, as is corn, the cilantro, cumin, and cayenne are new additions for me. I do wish I had serrano peppers, but I had to settle for jalapeno, as usual. For dinner tonight we only had a taste, so I didn't try the Emeril's Essence, so I do look forward to trying that with lunch tomorrow! We served this with No Knead Bread, #348028, which I highly recommend, as well as the chopped green onions, extra cilantro, and shredded cheddar. Absolutely divine! Made for PRMR Tag. This is a fantastic chili! The only thing I left out was the mushrooms, due to allergies. Everything else was spot on. If you like veggie chili, you have to try this one! Thnx for posting, Sharon. Made for KcK's Forum Tag Game.
