  1. Heat tortillas according to package directions; keep warm.
  2. Heat olive oil in a large skillet.
  3. Add carrot, onion, and garlic; cook over low heat, stirring constantly, 2 minutes.
  4. Stir in tomato sauce and next 7 ingredients; cover and simmer 5 minutes.
  5. Spoon about 1/2 cup vegetable mixture evenly down center of each tortilla; sprinkle evenly with 1/4 cup Cheddar cheese.
  6. Fold burrito style.
  7. Serve immediately with salsa and guacamole.

Marvelous!! This is loaded with yummy veggies. The chili powder and cumin gave it a very nice flavor. These were easy to assemble. My husband who is the consumate carnivore even gave this a 5-star rating. Nurse Di--your recipes are amazing. Thanks :)
