  • 1 tablespoon grated ginger
  • 1 tablespoon chopped garlic
  • 2 tablespoons low sodium teriyaki sauce
  • 12 cup vegetable stock
  • 1 tablespoon Thai sweet chili sauce
  • 1 tablespoon sesame oil
  • 12 red pepper, thinly sliced
  • 12 yellow peppers or 1/2 orange bell pepper, thinly sliced
  • 3 spring onions, thinly sliced (keep green part separate)
  • 1 cup snow pea pods
  • 12 cup edamame
  • 12 cup slivered almonds or 1/2 cup cashews
  • 2 heads baby bok choy, cut in half

directions

  • In a small bowl, whisk together the first 5 ingredients.
  • Heat oil in a frying pan until hot. Add the peppers, onions, snow peas, edamame, and nuts. Cook for 3 minutes, stirring frequently.
  • Add the sauce from the bowl and the bok choy. Cook, stirring, until it thickens.
  • Serve immediately.
