Vegetable Stir Fry

ingredients
- canola cooking spray or canola oil
- 1 diced yellow onion
- 2.46 ml garlic (jar)
- 236.59 ml chicken bouillon
- 118.29 ml white wine
- 1 stalk celery
- 2 yellow squash
- 1 medium zucchini
- 236.59 ml green cabbage, sliced
- 226.79 g asparagus
- 226.79 g tofu (extra firm)
- 1.23 ml pepper (to taste)
- 1.23 ml cumin
- 2.46 ml dill
directions
- Rinse and cut up all the vegetables.
- Slice tofu into bite-sized pieces and drain in a sieve.
- Lightly spray or oil the fry pan with Canola oil/spray and place the pan over medium high heat.
- Add onion and garlic and saute for 3 minutes; do not let them burn.
- Add remaining vegetables but save the asparagus for last.
- Add chicken bouillion and cooking wine.
- Cover fry pan.
- Stir frequently and cook until desired tenderness.
- Create a circle in the middle of the pan by pushing the vegetables aside.
- Drop in the tofu and turn as needed.
- Add asparagus and sprinkle herbs over the vegetables.
- Enjoy!

I am very interested in seeing your ratings and reading your feedback. <br />Experimenting with new recipes is one of my favorite pasttimes. I follow an almost vegetarian diet. I eat fish but really not much meat anymore. <br />I am in my mid-50s and lead a very active lifestyle: horseback riding, running, and strength training. I feel terrific and I give lots of credit to healthy eating. <br />This community is an inspiration to me! It is the first place I will go for online recipes because the feedback is so helpful. I search it for new recipes almost every day. <br />My recipes will be mostly the lower fat, moderate sugar, and vegetarian style of cooking. I'd say there a bit unusual in some aspects :) <br />I hope you like my postings.
