  1. Saute onion, carrot, celery (stalk and leaves), garlic, leek, and thyme in olive oil.
  2. Add water and bouillon cubes.
  3. Add squash and spinach.
  4. Add tomatoes.
  5. Sprinkle with pepper.
  6. Simmer 1 hour, partially covered.
