      Very easy version of Pad Thai. I left out the egg & fish sauce to keep it vegan, but otherwise made as written (except spinach for mustard greens). Lots of flavour, I found the lime really came through and the method for cooking the rice noodles was perfect.

      This was a really good noodle dish. I used just a half tablespoon of the oil, and skipped the egg for our tastes. I used cilantro for me and basil for DH. I loved the flavor the greens brought to the dish, and that they were different from the usual veggies in this kind of recipe.

      This is a beautiful and tasty version of this recipe. Easy to put together and a nice vegetarian entree. I made this for ZWT #6 and I'm a Quisine Queen.

      This is a very authentic tasting pad thai made with few ingredients for the sauce, which is a bonus! I have before made similar dish but where you needed 8 ingredients for the sauce. This is quick, delicious and healthy - just loved it! I used red and green pepper, shallot and some pork tenderloin I had left over from the other night + the eggs as listed. Tons of cilantro on top. Just YUM. Made for PRMR Tag.

      Yum! I halved the recipe, used whole wheat angel hair pasta and lemon. I enjoyed all the veggies, and had enough for 2 nice servings. Thanks Ellie! Made for Newest Zaar tag.
