This is one of my all time favorite meals. I first made this dish about 4-5 years when I watched Rachael Ray make it on her show, 30 Minute Meals. It's absolutely delicious. The only thing I have changed from the original recipe is that I use 3 small zucchini or about 2 cups worth and I use roasted red peppers from the jar. Definitely don't forget the fresh basil to top it off. You simply must try this recipe :)
