I discovered this in a cookbook of mine and thought I'd try it--sneaky way to see if my kids will get more veggies in their diet.

Directions

  1. Cook vegetables until tender.
  2. Sauté the onion in small amount of oil.
  3. Mix vegetables, onions, mayonnaise, cheese, and water chestnuts together and pour into a 9by13 inch dish.
  4. Top with crushed Ritz crackers.
  5. Drizzle melted margarine over the Ritz.
  6. Bake at 375°F for 15 minutes or until bubbly.
