ingredients
- 1 bunch fresh broccoli
- 1 head fresh cauliflower
- 1 (10 ounce) can cream of mushroom soup
- 1 1⁄2 cups shredded swiss cheese
- 1⁄2 cup sour cream
- 1 (16 ounce) can French-fried onions
- salt & pepper
directions
- Steam broccoli, cauliflower and green beans if using until al dente. Combine veggies, soup 1/2 of the shredded cheese, sour cream,and 1/2 of the onions.Add salt & pepper to taste. Pour into casserole dish and cover. Bake at 350 degrees for 30 minutes. Remove from oven. Top with remaining chees and onions. Bake 5 minutes longer or until cheese is melted.

I'm not much for cream of mushroom soup, so swapped it out for the cream of vegetable kind! Also used lemon pepper instead of the usual S&P, & that all made for a nice tasting casserole! Another time I might just add a little more color with half of a red bell pepper diced! [Made & reviewed in New Kids on the Block tag]
