Loved the taste of this soup and the ease of making it in a crock pot. I did cook this on low and used one large green pepper, canned cut green beans and double the tomato sauce. The barley and corn adds a nice texure. Will be making this soup again!

  1. Combine all ingredients in slow cooker.
  2. Cover and cook on low heat setting 8 to 9 hours (on high heat setting for 4 to 5 hours) or until vegetables and barley are tender.
