really healthy and delicious! I used greek yogurt in place of the sour cream and served it with baked salmon. yum!
Yummy salad! I was a little skeptical about how the asparagus would taste with southwestern ingredients but it made it heartier than it would be without. I used a red bell pepper (not a fan of green peppers) and added cilantro. I also made it once without sour cream for a vegan friend. She said it tasted great and the avocado made it creamy without the dairy! My husband said this is one of his favorite salads of all time! I agree, it's creamy and flavorful.
I was looking for something to do with some leftover asparagus. Very easy, nutritious and delicious. I substituted yogurt for sour cream and green beans for the corn (didn't have any). Wrapped it in a tortilla with some salsa for the perfect work lunch.
