Nice soup for a chilly night! I liked that this didn't take too much preparation and that it was done in 3 hours. I spent about 20 minutes chopping the vegetables and it was clear sailing from there! I did add quite a bit more cheese than 1 cup, as it doesn't have a lot of flavor. That isn't a bad thing though, as all the veggies made it a nice, soothing soup. I felt like I was eating "stone soup", without the stone of course. Thanks for sharing!

  1. Add potato, zucchini, carrot, celery, and scallions to slow cooker,.
  2. Add stock and season with salt and pepper.
  3. Cook on high 3-4 hours.
  4. Just before serving, add creamed corn, cheese and parsley.
  5. Serve when cheese has just melted.
