  1. In large saucepan, boil potatoes until just tender, about 20 minutes.
  2. In frying pan, sauté onion, garlic, chile pepper and apples in oil over medium until onion is translucent; stir frequently.
  3. Drain potatoes and add to frying pan, along with raisins and peas. Add curry powder and salt and pepper to taste. Mix to combine.
  4. Stir in coconut milk. Cook 15-20 minutes. The cornstarch may be added to thicken sauce if desired.
