Vegan With a Vengeance Chocolate Chip Cookies

Ingredients:

Serves: 36

Yield: 36.0 cookies

• 1 cup margarine , chilled
• 1 ¼ cups sugar
• 1 tablespoon molasses
• 2 teaspoons vanilla extract
• 2 ½ cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 ½ cups semi-sweet chocolate chips

Directions:

1. Preheat oven to 350°F.
2. Cream together the margarine and sugar until fluffy.
3. Add the molasses and vanilla.
4. Add the flour, baking soda, and salt, and mix well.
5. Fold in the chocolate chips.
6. Drop by teaspoonfuls spaced a little over 2 inches apart onto ungreased cookie sheets.
7. Bake for 8 to 10 minutes, until ever so slightly browned. Let cool on the baking sheets for 5 minutes, then transfer to a cooling rack.
