Vegan Whole Wheat Peanut Butter Pancakes

  1. Combine flour, baking powder, and sugar.
  2. In a separate bowl, mash the banana and add the soy milk and peanut butter.
  3. Combine flour mixture and peanut butter mixture.
  4. Let batter sit for 5 minutes while spraying the griddle and heating it.
  5. Pour 3 inch pancakes and cook for 2 minutes on each side.
  6. Serve with maple syrup, fruit spread, bananas, etc.

I liked these a lot! They are very moist and dense and filling. Mine had a stronger banana flavor than I expected, but I like banana so that's OK. I used honey instead of brown sugar. Thanks!
