  • Preheat oven to 350°F.
  • Line 12 muffin tins with paper liners.
  • In large bowl, stir together flour, bran, sugar, baking soda, and salt.
  • Stir remaining ingredients till gently mixed.
  • Spoon into muffin cups and bake for 25 minutes or until toothpick comes out clean.
  • Let cool completely.

  1. These turned out very delicious! This is a great base recipe and it's easy to tweak if you desire. I made a few adjustments... I used pumpkin seeds and dried cranberries because I prefer them. Also, I used homemade applesauce to add nutrients and flavor and sprinkled the tops with cinnamon. Yum!
     
  2. Made these tonight. Used almond milk instead of soy (had that on hand), Added a few grated carrots and 1 tsp cinnamon. They came out great! Good foundation recipe.
     
  3. Turned out AWESOME! I did add half an apple diced up to mine just to add some more nutrients! Love it! :)
     
  4. MAKE THESE MUFFINS! Amazingly good. I cut the sugar down to only 1/4 cup because I used sweetened vanilla soy milk (costco brand). -- they were plenty sweet. I used chopped walnuts instead of sunflower seeds and used 1 cup whole wheat flour and 1/3 regular. These would be great with dried cranberries or any other additions as well. I made mini muffins and baked for 15 minutes.
     
  5. Sugar? People who eat organic don't use "sugar" that has been refined. What are the alternatives there?

  1. MAKE THESE MUFFINS! Amazingly good. I cut the sugar down to only 1/4 cup because I used sweetened vanilla soy milk (costco brand). -- they were plenty sweet. I used chopped walnuts instead of sunflower seeds and used 1 cup whole wheat flour and 1/3 regular. These would be great with dried cranberries or any other additions as well. I made mini muffins and baked for 15 minutes.
     
  2. Excellent recipe-- produced moist, craveable muffins. I made a few mods based on what I had on hand: --Substituted soy milk for rice milk --Used an extra 1/2 cup sugar and 1/4 oil instead of apple sauce --added scant 1/2 cup wheat germ
     
  3. WoW! these are so good! I have tried so many vegan bran recipes, and they always come out grainy or chewy..this is fluffy and just the right amount of sweetness...I used a mashed banana instead of the applesauce, and vanilla soymilk, omitting the vanilla, as I was out of these things..
