Vegan Waffles

"I made these once before without the baking powder, but I added blueberries. They were very good; a little heavy because of the lack of baking powder though. I recommend them. You can use the same batter for pancakes. You can also substitute the water for more soymilk for a richer flavor."

  • Mix banana and water.
  • Add dry ingredients and mix leaving lumps in batter to prevent waffles from become rubbery when cooked.
  • Cook on/in waffle iron.

  1. I tried this vegan recipe without baking powder for a friend and it came out pretty good! Thought it would be compacted and heavy because of the lack of the baking powder but no. Instead, I blended all ingredients, added 1 Tbsp chia seeds, a pinch of salt, 2 Tbsp honey, and a pinch of cardamom to substitute the cinnamon/nutmeg. Great recipe!
     
  2. I made these this morning and they turned out very nice. I set my waffle iron at a pretty high temperature and sprayed with coconut oil and there was no sticking at all. I really like the oatmeal being in there, but it made me think I didn't stir the batter enough at first!
