- 1 cup canned pumpkin
- 1 cup brown sugar
- 2 egg substitute
- 1 1⁄2 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1⁄2 teaspoon clove
- 3 cups oatmeal
- 1 cup raisins
- Mix and form into small balls. The cookies will expand slightly but they shouldn't be too flat when they're done.
- Bake on greased cookie sheet at 350 for 10-20 minutes.
- For the egg substitute, I've made it successfully using both Ener-G egg replacer and applesauce. I'm sure that there are other substitutes that would work as well.

These are not vegan though. The egg substitute is just the egg white.
I just made these cookies and I'm afraid they're not very good. They were very tough and chewy. Is the oatmeal supposed to be cooked first? If so, you should include that in the recipe. Sorry it didn't work out for me.
