Vegan Pumpkin Muffins

These were tasty muffins, but had a very strange texture. They had a dry, crunchy outer shell, and a very dense, chewy centre. I may try some oil in the recipe if I make it again. The pumpkin flavour was quite delicious, though, and the amount of sugar was perfect. Thanks for sharing!

  1. Mix all ingredients except the last two and pour them into greased muffin tins.
  2. For each muffin, mix the 1 Tbsp brown sugar and the 1 1/2 tsp cinnamon and place them on top.
  3. Bake at 375 degrees for 25-30 minutes.
