- Mix all ingredients except the last two and pour them into greased muffin tins.
- For each muffin, mix the 1 Tbsp brown sugar and the 1 1/2 tsp cinnamon and place them on top.
- Bake at 375 degrees for 25-30 minutes.
These were tasty muffins, but had a very strange texture. They had a dry, crunchy outer shell, and a very dense, chewy centre. I may try some oil in the recipe if I make it again. The pumpkin flavour was quite delicious, though, and the amount of sugar was perfect. Thanks for sharing!
