These were great! I used a gluten free flour mix in my cookies, which possibly made them a bit thicker. Two layers were too much, but that's okay, because we had twice as many cookies. I loved the crunch of the finished product.... couldn't stop eating them. Oh, by the way, I made orange instead of mint: I added more orange peel to the recipe. Next time I might add orange extract to the chocolate, too. YUMMY!
