A MUCH MUCH healthier alternative to mayonnaise. Spices can be added to taste.
- Boil salted water, add tofu and return to a boil.
- Immediately remove from heat and let sit for 3 minutes.
- Drain tofu and place in food processor with remaining ingredients and process until smooth.
I was really skeptical about this recipe- I LOVE mayo and am trying to eat a vegan diet and that was my downfall. I tried this recipe but added a touch of oil to give it more mouth feel- not as healthy but definitely better than regular mayo. I think it tastes better after chilled for at least a day- the flavors come together and make this a good alternative. Thanks for posting.
I added garlic powder, celery seed, black pepper, lemon pepper, and a bit of red pepper flakes. It is definitely not the taste of 'real' mayo but for a healthier alternative it is tasty.
