Vegan Mayo. I love this because it costs so little to make than store bought and plus having moved to Greece i just couldn't find any. It took me a long time trying recipes on the net and modify them to be actual mayo.This one is a modification of a lovely person here on this site and it works. I use a simple hand blender with it's own mixing jar and a "marize " silicone spatula to scrape every single oz.

This turned out very nice and it was so easy! I used about 2/3 cup oil. I used about 1/2 extra virgin olive oil and 1/2 corn oil. I think next time I will try sunflower oil with just a little bit of olive as it was strong. I loved the way it thickened up and used it in sandwiches and slaw. Thanks for posting!

Ingredients Nutrition

  • 12 cup soymilk
  • 14 teaspoon salt (or more to taste)
  • 1 teaspoon mustard
  • 1 tablespoon apple cider vinegar (may need a tad more or less depending on your oil)
  • 1 cup oil (I have used both corn and olive mixed and also a little less than a cup)
  • 14 sweet paprika (if you feel like it)

Directions

  1. to start blend soy milk, salt, mustard, paprika.
  2. Add the vinegar,blend for a few seconds.
  3. Then slowly add the oil till smooth.
  4. Some times you may not need all the oil so do not use it if you see it thickened already.
