Everyone liked these. I used butter and cooked the syrup on the stove in a pot. They were so easy. While cooling, I kept stirring every 5 minutes until they hardened up. They released from the tray very easily. Next time I will add dried cherries or cranberries to the bowl while serving. Thank you, MizEmerilLagasse, for posting.

I didn't make these vegan; I used butter and regular real maple syrup, but they turned out SO good! I love cashews to begin with and this recipe makes a good thing even better! They are not too sweet and really bring out the creaminess of the cashews. These have become a potluck/party staple for me!
