This was a bit too lemony for my taste. When I make it again, I will probably omit all or most of the lemon juice, then it will be perfect. It's very creamy and filling, and it's a good thing that it doesn't contain as much fat as my favorite nut-based vegan mac & cheese recipes.
I've been eating this since I was 2! I'm always excited when someone makes and now I'm old enough to help . The last time we made it we put a couple tablespoons of puréed cashews to make it extra creamy. Yummy!!!!
