Moist banana bread that is low in fat but high in taste. Makes for killer french toast! IMPORTANT: always mix by hand until just combined. An electric mixer yields a tougher bread.

  1. Mash the bananas
  2. Mix in the remaining wet ingredients.
  3. Sift together dry ingredients and add to wet mixture.
  4. Mix in raisins if using.
  5. Mix until JUST combined.
  6. Pour into greased bread pan and bake at 350 for 45-50 minutes.
  7. When finished baking, invert onto cooling rack.
  8. Slice and enjoy!
