Posted in response to a request for non dairy/soy hot cocoa. Hope it helps!
- 1 tablespoon cocoa
- 2 tablespoons unrefined vegan sugar
- 1 cup rice milk
- 1⁄4 teaspoon almond extract or 1⁄4 teaspoon vanilla extract
- Add All of the ingredients in a microwaveable mug and microwave on high for 1 minute.
- Stir and drink.
I used unsweetened almond milk so I added a touch more sweetener. Used Splenda to make this low carb. This really satisfied the craving for cocoa without spiking my blood sugar. Thanks for sharing!
Very good basic cocoa recipe! Way too sweet for me with two tablespoons sweetener, because the rice milk itself already is quite sweet, but that's personal preference. Thanks for posting!
