Hats off to Ms. Dreena Burton for this delicious recipe. I've made only a few minor modifications to her "Living Caesar" recipe, and have found that I actually now prefer this vegan version to a traditional caesar. http://www.rawfoodrecipes.com/recipes/living-caesar-salad.html
- In a small saucepan bring 2 cups water to boil. Remove from heat, add cashews, cover, and set aside for 30+ minutes. Drain cashews. Place all ingredients in a blender along with some fresh herbs-chives, tarragon and chervil or parsley for a traditional Green Goddess, or substitute the lemon juice for lime juice and add jalapenos, green onions, and cilantro for something with a bit more kick. Blend until smooth.
