This is recipe is my mother's friend's neighbors, who is not (as far as I know) vegan. The recipe happened to be though. Anyway, it is very easy as well as healthy. I like to use maple syrup but you can also use honey, agave nectar, corn syrup, etc.

  1. Preheat oven to 300°F.
  2. Line 2 loaf pans with parchment paper.
  3. Stir together all of the ingredients.
  4. Divide batter between pans.
  5. Cover tightly with tin foil.
  6. Bake 1 1/2 hours, if it is uncooked still, bake an additional five minutes uncovered.
