ingredients
- 1 cup soy margarine
- 1 1⁄4 cups sugar
- 2 teaspoons vanilla
- 1 tablespoon molasses
- 1⁄4 cup soymilk
- 2 1⁄4 cups flour
- 1⁄2 cup cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup chocolate chips
directions
- Pre-heat oven to 350 degrees.
- Cream margarine, sugar, vanilla and molasses until fluffy.
- Add soy milk and combine.
- In a separate bowl, combine flour, cocoa powder, salt and baking soda.
- Mix dry ingredients with wet ingredients.
- Stir in chocolate chips.
- Place dough by tablespoon onto ungreased cookie sheet approximately two inches apart and bake for 8-9 minutes.

Whoa. Incredible. I made these for a bridal shower but I ate the whole batch myself. I told the bride-to-be “too bad, you already are getting all the attention and everything you wanted, the least I can have is a whole batch of the most perfect vegan cookies ever created, stop bothering me Rochelle.” Really, these are worth ending a 20-year friendship over.
