I've made this a few times (though I use spelt flour rather than semolina): the first time adding dill and making a chickenless noodle soup; the second time I added herbs of provence and made a pasta salad; and most recently I served with Roasted Red Pepper Pesto. I love this pasta!

Really nice chew and flavour. After trying it for the first time last night, I think I'm going to keep using this as my go-to. <br/><br/>Used this dough for vegan 'meat' ravioli in a tomato herb sauce. Ingredients for mixture: garlic, onion, olive tapenade, oregano, rosemary, thyme, pepper steak spice mix, Yves 'ground round', salt, tomato sauce. <br/><br/>Couldn't get enough!

  1. Mix together dry ingredients in large mixing bowl until well-incorporated. Make a well in the center of the flour and add the water, mixing until a rough dough forms.
  2. Turn out on a lightly floured surface and knead until smooth and slightly elastic, adding more water if dough is too dry and tears or cracks.
  3. Form a log and wrap in a damp towel. Allow dough to rest for 20 minutes.
  4. Roll and cut according to your pasta machine's specifications.
