Vegan Dad's Fresh Vegan Pasta (Pasta Machine)

"From Vegan Dad's blog: http://vegandad.blogspot.com/2008/10/fresh-vegan-pasta.html. I've made this a few times (though I use spelt flour rather than semolina): the first time adding dill and making a chickenless noodle soup; the second time I added herbs of provence and made a pasta salad; and most recently I served with Recipe #432028. I love this pasta!"

directions

 • Mix together dry ingredients in large mixing bowl until well-incorporated. Make a well in the center of the flour and add the water, mixing until a rough dough forms.
 • Turn out on a lightly floured surface and knead until smooth and slightly elastic, adding more water if dough is too dry and tears or cracks.
 • Form a log and wrap in a damp towel. Allow dough to rest for 20 minutes.
 • Roll and cut according to your pasta machine's specifications.

 1. Thanks for sharing blog with us Vegan Dad http://leangreendad.com/

 2. Really nice chew and flavour. After trying it for the first time last night, I think I'm going to keep using this as my go-to.

Used this dough for vegan 'meat' ravioli in a tomato herb sauce. Ingredients for mixture: garlic, onion, olive tapenade, oregano, rosemary, thyme, pepper steak spice mix, Yves 'ground round', salt, tomato sauce.

Couldn't get enough!

I'm an ethical vegan, atheist, wife and stay-at-home mother of a 7 year old DD and 1 year old DS. I have also been known to hug a tree from time to time, but I don't do it professionally. I love life, walk around in awe of the universe, and am always made happier by things that smell delicious. Like pumpkin pie spice. And turmeric. We've been vegan since Fall '08, and are just starting to feel like we know the tricks of the trade...and Recipezaar has certainly made the transition easier. Yey Recipezaar!
