My healthy adaptation of a vegan recipe

  1. Boil water, add to flax meal, stir and let stand for 10 minutes.
  2. Mix sugar, pumpkin, oil, vanilla, and flax meal mix.
  3. Add flour, baking powder, baking soda, cinnamon and salt. Stir to mix well.
  4. Add chocolate chips and stir.
  5. Bake at 375 for 10-12 minutes.

This has a very chewy texture and a bit of a bland taste. Not my favorite, but definitely unique.
