  1. Mix cake ingredients and bake at 350 degrees for 40 minutes.
  2. FROSTING: Mix sugar and cocoa powder in saucepan.
  3. Stir in soy milk, oil, salt, and margarine.
  4. Heat to boiling and let boil for 3 minutes, stirring occasionally.
  5. Let cool, then add vanilla and powdered sugar until desired consistency is achieved.

This is the best CAKE recipe, period. The fact that it is vegan and I can eat it is just a bonus. I make this recipe in cupcake form for people to share at bake sales and for people in my office and they can't beleive how good it is. People who aren't really fans of cake have told me that they love this one. It is moist and rich, but not too sweet or overpowering. It's just great!

good vegan cake. it definitely fulfilled a chocolate craving. it was a little dry though, but still tasty. i had to add more soy milk to the frosting, it came out pretty hard at first. i enjoyed making it though, and eating it! thanks for the recipe.
