This was the tastiest cake I've ever baked! I used Stevia instead of sugar. Love that it has no dairy or eggs! Perfect for everyone in our family. I'll be using this recipe from now on for any chocolate cakes or cupcakes I bake.

  1. For the cake:.
  2. Preheat oven to 350 degrees.
  3. Combine flour, sugar, salt, baking soda, and cocoa powder in large bowl.
  4. Make a well in the center then add the vanilla, oil, vinegar, and water.
  5. Stir until mixed well.
  6. Pour into greased 9x9 baking dish or cupcake pan (will make 8 cupcakes).
  7. Bake 30 minutes. Should pass the toothpick test.
  8. For the frosting:.
  9. Cream the 'butter' in a bowl.
  10. Add sugar, cocoa, vanilla, and water to make a thick but spreadable frosting.
