  1. This recipe is super yummy! My guests couldn't keep their chips out of it! I used low fat cream cheese and omitted the red onion. Still good! I highly recommend this!

  2. excellent - took to a potluck and everyone loved it (mostly carnivores there) and didn't realize it was vegan!

  3. Very good and easy. Had it for several days - over tortilla, then over shredded chicken. Would definitely cook again!

  4. I LOVE this queso dip. My 5 vegan children adore it also, as well as adults I've served it to! It's simple to make, and smells and tastes divine. No need for any additions or changes - it's PERFECT the way it is. Thank you, Carol, for posting this recipe!

  5. This ROCKS!!! I could not wait on a crok pot, so I sauted the red onion in a dab of olive oil, then threw everything else in. Let the cheese melt and WOW! I can see a ton of different items you could add to this. I put cilantro on the top for presentation. Next time I might add fresh, chopped tomatoes to the end. I will have to have this at least once a month.

As an ethical vegan, I'm always on the lookout for tasty, cruelty-free meals. I work in the medical field, but my heart lies with anything and everything relating to animal welfare. I share my home with two each furry (cats) and feathered friends. Something I'd like to encourage all chefs is, don't be afraid to experiment! I'm not always really specific about measurements, and that's because I go by feel, so if you want to add a little more or a little less -by all means!
