Vegan Banana Oat Cookies

"My friend who is a baker gave me this recipe because I am in love with these cookies! You don't have to be vegan to enjoy these. *Don't omit the cinnamon. It's what makes these cookies the best."

  • Mix the flour, baking soda, cinnamon, and salt; set aside.
  • In a separate bowl mix together the brown sugar, sugar, oil, and water.
  • Add the banana and vanilla.
  • Stir in the flour mixture. mix well.
  • Stir in the oats.
  • If the mixture seems too thin, let it sit for a minute so the oats can absorb some of the excess liquid.
  • Preheat oven to 350°F.
  • Drop cookies by the tablespoon onto a greased cookie sheet.
  • Cook for 13 minutes until done (they should be a bit browned on the bottom).

  1. Delicious - was looking for something vegan for a bake sale, but these are good by any standard. I added a cup of chopped pecans which made it taste just like banana nut bread and gave it some nice texture.
     
  2. This are delicious! To make them gluten free, we substituted Chickpea flower and it worked well. We added Trader Joe's vegan chocolate chips too and they added a nice flavor.
     
  3. love this recipe to use up one remaining banana and always have oats on hand, so thanks emerald. I reduced amount of sugar to one cup and used coconut oil. taste great. will try with applesauce too.
     
  4. If you do two small bananas instead of 1 banana you will have a better result. Terrific cookies!!!
     
  5. Wonderful cookies! Even better that they're healthy. My 4 year old even likes these treats and she's a tough sell :-) I made the recipe with 2 bananas and 1 cup brown sugar and added 1/2 cup raisins. I didn't flatten before baking and they turned out very moist and chewy. Thanks for sharing these great treats.

  1. I used less oats than the recipe called for.
     
  2. I read that brown sugar and white sugar are processed using bone char so instead I used 1 cup of Sugar In the Raw turbinado cane sugar to make them truly vegan. YUMMMM!
     
  3. These were delicious! I made some small changes to make them healthier but they still tasted great. I used applesauce instead of oil and I cut the sugar down to 1 cup. My kids loved them. Thanks!
     
  4. These cookies were great! I made some substitutions/additions that worked out as well: 1) replaced brown and white sugar with 3/4 c white sugar and 3/4 c artificial sweetner 2) added 1/2 c coconut 3) added 3/4 c raisins Thank you esmerelda smoot!

i've been a pesco vegetrian for over 10 years. i love to travel and try new things. my husband and i both enjoy cooking as do our families. his family is actually quite intimidating when it comes to cooking. i found this out the first Thanksgiving i spent with them when his mother pulled out the wheat to grind to make the biscuits! we are expecting our first child due in january '09.
