Cook 30 mins
- 2 tablespoons sugar
- 1 egg substitute
- 1 teaspoon vanilla
- 1⁄2 cup soymilk
- 2 -3 mashed bananas
- 1 1⁄2 cups flour
- 1⁄4 teaspoon baking soda
- Mix all ingredients except the last two, then sift them into the mixture.
- Don't overstir.
- Bake at 350 degrees Fahrenheit for 25-30 minutes in greased muffin tins.
I am sorry, but these just weren't for us. The texture is just not there at all, and they are very chewy. They also completely stuck to the liners and you have to gnaw at the paper to get it off. The flavor could have been a little sweeter for us as well, and we added some chocolate chips which helped. I don't think we would have liked the taste at all though without them. I am very sorry this didn't work for us. Maybe I should not have used liners, but I normally do with no problems.
i halfed the recipe and got 6 muffins (which is good considering i ate a lot of the batter)these were completely awesome! thank you so much for the vegan recipe!
great recipe smileyfroggy! as a new vegan im regularly consulting your wonderful recipes and this one was just great as usual!! i halved the recipe, added some cocoa, and baked them for 12min in a mini muffin tin! They were great- not too sweet, just right. My family thought so as well!
