I am a vegan myself due to being lactose intolerant and allergic to egg yolks, I find it hard to find recipes without these ingredients so I make my own versions of them, swapping some ingredients for vegan alternatives, this recipe is one of them.

  1. Cream margarine, sugar and vanilla together until light and fluffy. Add oil, beating well. Sift flour and baking powder together and mix into creamed mixture. Add cranberries and mix well. Roll heaped teaspoonful of mixture into balls and place on an oven tray. Flatten slightly with a floured spoon or fork. Bake at 190 C for about 12 minutes or until pale golden. Cool on a cooling rack.
