I can peaches every year, and did a little experiment with the leftover peaches. My husband loves this on waffles. Tastes great over ice cream, too.
- Combine peach puree, sugar and lemon juice in kettle.
- Bring to a boil.
- Simmer 5 minutes.
- Add vanilla.
- Pour into hot jars and seal.
- Process in boiling water bath for 20 minutes.
YUM YUM YUM!! I got 12 half-pints out of almost 9 cups of peaches. I can't wait to try this over my pork roast (along with ice cream, pancakes, ice cream, cakes, etc) :) Thanks for the great and simple recipe!
Yumm, Heading off this morning to pick more peaches. Love this recipe, thought I did alter it a little. As well as adding the vanilla I added 2 tablespoons of chocolate port. It was a big hit in my house hold last night, in fact theres no ice cream left. Thanks for sharing it.
Just made a big pot of this, and it is fabulous! I made 18 cups of peach puree but only put in sugar and vanilla for a triple batch. Filled 3 qts and 4 + pt jars. Next time I am interested in substituting the vanilla for almond oil.
