  • Beat cream cheese, eggs, vanilla, lemon juice and sugar.
  • Put cup cake liner in muffin tins, put 1 wafer in bottom of each.
  • Pour batter over each.
  • Bake 350* for 15 minutes.
  • Top with pie filling, if desired.

  1. Not only did these not set at all, the wafers floated right up to the top. I tried baking them longer, but they burned (and still didn't set). I don't know what went wrong.
     
  2. I made these with a group of girl scouts and they loved them. They were easy to make and fun.

I liked the recipes flavor, but mine didn't set up very well, the mixture was a little too thin, my cookies floated to the top of the muffin holder on a couple of them, but I have to admit I did modify it by using "better than cream cheese" instead of cream cheese and that might have taken away some of the weight of the mixture. I also added mini choc chips because I am a chocolate hound. All in all the flavor was good and my children and very picky boyfriend enjoyed them even though the results weren't perfect.
