- 1 -2 shallot, minced
- 1 vanilla bean, split
- 1⁄4 cup butter
- 1 cup white wine, very light such as pinot grigio
- 1⁄2 cup heavy cream
- salt and pepper
- 1 pinch sugar
directions
- Saute shallots, add wine, and peeled vanilla bean. Boil down slowly (about 2 hours); stir occasionally. Add cream simmer down. Add salt, pepper and sugar. Serve warm over cooked lobster.
