This goes on vegetable OR fruit salads! If you warm this dressing, it is wonderful on broiled or grilled chicken or fish.

  • 13 cup V8 vegetable juice (Homemade style#116741)
  • 2 tablespoons fresh lime juice
  • 14 teaspoon lime zest, fresh
  • 2 tablespoons oil
  • 12 teaspoon cumin, ground
  • 14 teaspoon salt
  • 1 tablespoon red onion, chopped

Directions

  1. Using a blender or whisk, incorporate first six ingredients.
  2. Stir in red onion.
  3. Allow flavors to meld at least fifteen minutes.
