  1. In large nonstick skillet brown beef and onion. Drain. Add tomatoes, seasonings and rice.
  2. Simmer 20 minutes Add garlic, green peppers and mushrooms.
  3. Simmer another 10 minutes until pepper is tender crisp. Remove from stove. Add cheese and serve.
