Uncle George's Apple Pie

  • Preheat oven to 425°F.
  • Peel core and slice apples, toss with lemon juice, set aside.
  • Melt butter in saucepan, stir in flour, cornstarch, spices, Splendas, apple juice, vanilla and rum. Bring to a boil, reduce heat and simmer for 5 minutes.
  • Line 9” glass pie plate with half of pastry.
  • In large bowl, gently toss apples with sauce, ensuring all apples are coated. Pour apple mixture into crust.
  • Roll out remaining pastry to fit top of pie.
  • Cover apples with remaining pastry, seal and crimp edges
  • Cut slits in top of pie.
  • Stir cream and egg yolk. Brush on top of pie.
  • Bake at 425F for 15 minutes. Reduce heat to 350 degrees and bake 40-45 minutes or until golden brown.
  • Remove from oven and let cool 1 hr before serving.
