No one will be able to resist these heaven-sent fish cakes. And they are incredibly easy. Give it a try and you will thank Uncle Charly.

  1. Medium size bowl, combine salmon, potatoes, cream, onion, peppers, parslye, and chives.
  2. salt and pepper to taste.
  3. Shape into four cakes.
  4. Coat with Parmesan cheese.
  5. Dip cake in beaten egg, let the excess run off, then coat with bead crumbs.
  6. Heat butter in non-stick pan.
  7. About 2 minutes each side.
  8. Great with a bed of couscous salad!

My family loves salmon and really enjoyed these fish cakes. I was puzzled however in the method where it said to add peppers but did not find peppers in the ingredients. I added red pepper just in case and loved it.

I really enjoyed the parmesan cheese. That was a great touch. The only thing that I coulodn't seem to get the way I wanted, was the consistency of the patty. It didn't hold together well in the pan.
