I thought this soup tasted great while being healthy and low-fat. I followed the recipe and did not add broth like other reviewers did. There is plenty of flavor without adding broth. I did add cauliflower and kale to the soup and I also pureed the tomatoes because I don't like chunks. Thanks for the recipe. I'm making another batch this afternoon!
Always great soups. We chopped up a 7-bone chuck steak, browned the pieces, and then made the soup in the pot (needed something to do with a big chunk of meat). The chuck pieces turned out very tender and the soup is delicious. Thanks.
mmmmm so good. I used homemade stock instead of water. I had it for dinner last night and lunch today and now I'm sad it's gone. Great flavor, filling, and the proportions of the ingredients was great.
I have made this recipe many times and it is wonderful. The changes I have made are: use Â½ cup of whole wheat pasta, veggie broth instead of water and diced tomatoes instead of plum tomatoes. I also add parmesan cheese on top. I just made it again today and it was perfect! Thanks!
This is a great soup recipe! It's easy, nutritious and full of flavor. I used vegetable stock and served the soup with grated parmesan cheese. It was wonderful on this rainy night! I will make this recipe on a regular basis. Thanks!

I have made this soup on numerous occasions, and it is always easy and yummy! I also use broth instead of water, and seem to always end up putting more veggies in than the recipe calls for, but I'm not much for measuring. As with many soups, the longer the ingredients are allowed to blend, the better it tastes! This is my go-to minestrone soup recipe!
YUM! I got my meatacarnivore hubby going back for 2nds on this! I"m not big on meat, so this was perfect for me.
This is delicious. I felt that the flavor was a little bland. Next time I will make with chicken broth (yes I know this is a vegetarian recipe). I also browned a pound of hamburger and added it to this soup. I like that the celery still had a little snap and that I get a lot of good veggies into me. Thank you Uncle Bill.
This is yummy and easy to make recipe. I did feel as if it was lacking a bit in flavor for my tastes, so I did the following: I substituted vegetable broth for the water, and I increased the amount of oregano and salt to 1 tsp each. Also, after the macaroni was finished cooking, I added 1 tbsp of red wine vinegar. This definitely added some more sparkle to the dish for me. Also, I use an entire can (14 oz) of cannellini beans. I've made this a number of times and it is a hit each time. Thanks!
