Well I should never have made these cookies, dh and me can't stop eating them.. I truly loved the whipped shortbread cookies,however; the almond extract in the scotch shortbread cookies and extra butter just blasted them off the planet.. p.S thanks uncle bill for your reponse to my question. Nita
These are incredible! I've been searching for my idea of the ultimate shortbread cookie and this is it. I have always made my cookies with icing sugar and cornstarch. They are excellent and I love them but they aren't my dream shortbread lol. These are! One thing I did differently though was to dip the bottom of my glass in sugar before pressing down on the cookies. Thank you so much for sharing this wonderful recipe!

Thanks Uncle Bill for a very authentic and easy Scottish recipe! I made 24 of these irresistible wee cookies, and as I couldn't get the almond essence, stirred in about a teaspoon of vanilla sugar. I have some other recipes, which are unfortunately weighed in pounds and ounces,- since moving here I cook using the easier cup measures. They melt in the mouth, and are a favourite with my family
These divine cookies just melt in your mouth. The dough is very soft but not unmanagable. I used vanilla extract - did not have almond - and dredged icing sugar over mine to serve. Please note that the number of cookies you get is WAY off!!! I changed the size to 12 cookies for the right ingredient measurements and got 48 cookies.
