Unbelievably Easy Pumpkin Spice Cookies

ingredients
- 524.46 g box spice cake mix
- 425.24 g can pumpkin puree
- 2.46 ml ground cinnamon
- 1.23 ml ground ginger

Icing
- 236.59 ml confectioners' sugar
- 14.79 ml milk
- 7.39 ml vanilla extract
directions
- Mix cake mix, pumpkin puree, and seasonings until well blended.
- Drop by spoonfuls onto an ungreased cookie sheet, flattening slightly.
- Bake at 350° for 25 minutes.
- Let cool for 5 minutes, then remove to a baking rack to finish cooling.
- Combine Icing ingredients, and drizzle over the top of the cooled cookies.

Anyone who knows me knows that I don't really like to bake. And, I really don't like to bake cookies. But, this recipe was simple enough that I was willing to sacrifice to make it. Besides...pumpkin spice? What can be wrong about that? LOL I tackled the recipe late one Sunday evening to satisfy a craving. I wasn't so thrilled with the cookies that night. They seemed dry and lacking a little in flavor. HOWEVER, the next morning, after sealed overnight in a rubbermaid container, the cookies really seemed to come into their own. They were dense, but moist; the spices came to life with the pumpkin flavor; they were very good with my coffee. They were everything that I like my cakey cookies to be. I will probably make these again to satisfy my sweet tooth, but I won't be baking them at 10pm at night again. LOL

Made these to take to a football get together and everyone complimented them! They're easy to make, that's for sure. I followed the recipe exactly, but I only made 2 dozen cookies. I used the rest of the batter to make some eggless pumpkin muffins and they turned out great, too! Don't skip the icing; it really enhances the flavor of these cookies! I agree with the other reviewer that these are best after they have cooled completely. Thanks for posting these, Elissa. I'm glad you weren't too embarrased!

Overall, these cookies actually went over better after they had completely cooled. I added chocolate chips to the recipe as well. My youngest son liked them the best -- he ate more than anyone else did. (He's currently 20 months old) I didn't add as much ginger as it called for as well -- ginger tends to be a bit too strong for my tastes. "Cookie good myself I do say", says Yoda! LOL
