There is a mexican restraunt next to my work and they serve this with large shrimp, and OMGOODNESS they are amazing, this is my take on it. They serve it with plain crackers. This could also be used as a marinade.
- 1⁄2 red onion, minced
- 1⁄4 cup fresh cilantro, chopped
- 1⁄4 cup fresh lime juice
- 2 teaspoons sugar
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon Tabasco sauce
- 1⁄4 teaspoon pepper
- 1 cup orange juice
- 1 cup salsa, hot
- 30 large fresh shrimp, unpeeled
- Boil shrimp for 5 min on high boil, drain.
- Mix all the ingredients and add shrimp
- Let sit for 30 min in fridge and serve.
Wow! This is awesome! I made this as directed but halved the recipe. I was a little surprised how much marinade there was and how thin it was but it was delicious. I know that this is not very Mexican, lol, but I used some French bread to sop up the marinade. Hey - tortillas and chips won't soak it up, right? Thanks barberbabe for a true keeper here. Made for Spring PAC 2013.
