Pancake Mix for the low/no carb eater.

  • 2 tablespoons almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons protein powder
  • 14 teaspoon baking powder
  • 1 dash salt
  • 1 large egg
  • 2 tablespoons heavy cream
  • 2 tablespoons water

Directions

  1. Mix together all the dry ingredients (the first 5).
  2. Then separately whisk together the wet ingredients.
  3. Then mix the two together, adding water as needed to get the consistency for the type of pancakes you like, thicker or thinner.
  4. Fry in a skillet, and flip when needed.
  5. This type of pancake is more apt to fall apart (lack of flour and all) so allow to cook a little longer than usual before flipping. And when flipping be careful.
